The baking soda in this science experiment causes the plant tissue around the veins of the leaves to soften and ‘dissolve’ over a few days. This clearly exposes the vein structure or ‘venation’ of the leaves to observe the two subclasses plants can be divided into. A ‘monocot’ plant, such as palms or banana trees, has a structure of parallel veins and is the ‘older’ species of plans, whereas a ‘dicot’ plant has a more sophisticated branched ‘venation’ and types of these trees include: Maple trees, Oak trees or Chestnut.
